Hamburger Vegetable Soup

Ingredients:

  • 1 pound lean ground meat
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 Tbl. canola oil
  • 4 cups beef broth
  • 1 bay leaf
  • 1 Tbl. dried oregano
  • 1 14 oz. can chopped tomatoes
  • 2 large carrots, chopped
  • 1 stalk of celery (opt)
  • 2 large potatoes, peeled and chopped
  • 1 cup frozen peas
  • 1 cup frozen cut green beans
  • 1 small can corn
  • salt and pepper to taste

Directions:

  1. Brown meat with onion and garlic in the oil in a large pot on the stove on medium-high til meat is cooked through and onions are clear.
  2. Add broth, bay leaf, oregano, tomatoes and bring to a boil.  Add carrots, celery and potatoes and simmer, covered, for about 15-20 minutes until vegetables are just tender.
  3. Add the rest of the ingredients and simmer, uncovered for about 10 minutes more.
