Tilapia with lime, cilantro and garlic

Okay, so I’m not really a big fish eater, but I discovered that I liked the mild flavor of Tilapia fish fillet.  I was trying to make a quick AND healthy dinner the other night and came up with this creation.  It doesn’t happen often that I just make something up, but lo and behold…it IS possible!

Tilapia with Lime, Cilantro and Garlic

  • Ingredients:
  • 1-2 tsp. olive oil
  • 2 Tilapia fish fillets
  • salt and pepper to taste
  • 3 green onions, sliced
  • 1 clove garlic, minced
  • 1 lime, fresh squeezed (opt. 2nd lime for serving wedges with meal)
  • 2 Tbl. fresh chopped cilantro

Directions:

  1. Heat olive oil on medium heat in a wok or non-stick skillet.  Add the onions and garlic to the skillet and sautee for about a minute.
  2. Salt and pepper the fillets on both sides generously.  Add them to the wok or skillet and brown briefly on both sides.  Add the lime juice and let simmer for another 3 minutes on each side…use your own judgment as to how long you need to sautee them according to your stove…but don’t overcook.
  3. Just before removing, sprinkle the cilantro over the fillets.  Put them on a plate with all the green onions, garlic and cilantro piled on them.  I like to have an extra lime wedge to eat them with, as well.

Ingredients:

  • 1 pound lean ground meat
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 Tbl. canola oil
  • 4 cups beef broth
  • 1 bay leaf
  • 1 Tbl. dried oregano
  • 1 14 oz. can chopped tomatoes
  • 2 large carrots, chopped
  • 1 stalk of celery (opt)
  • 2 large potatoes, peeled and chopped
  • 1 cup frozen peas
  • 1 cup frozen cut green beans
  • 1 small can corn
  • salt and pepper to taste

Directions:

  1. Brown meat with onion and garlic in the oil in a large pot on the stove on medium-high til meat is cooked through and onions are clear.
  2. Add broth, bay leaf, oregano, tomatoes and bring to a boil.  Add carrots, celery and potatoes and simmer, covered, for about 15-20 minutes until vegetables are just tender.
  3. Add the rest of the ingredients and simmer, uncovered for about 10 minutes more.

Nutty Chicken Strips (South Beach friendly)

This recipe is South Beach friendly–low carb and super simple

Nutty Chicken Strips

Ingredients:

  • Chicken breast strips, 1 pound
  • 1 bag of ground almonds
  • extra-virgin olive oil
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 3/4 teaspoon dried oregano
  • (for an extra kick, 1/4 tsp. ground red pepper)

Directions:

  1. Brush chicken breast strips with olive oil and heat up an additional Tbl. of oil in a medium-hot skillet.
  2. Put the nuts, salt, pepper(s) and oregano in a large ziploc bag, close, and shake to combine.  Add the chicken strips to the bag and shake to coat.
  3. Fry the chicken strips in a large skillet, about 3-4 minutes on each side.  check a strip by cutting it in the middle to make sure they’re getting cooked all the way through.  Goes great with roasted green beans!
